Featured Producer: Snowdrift Cider Company

When we first started working with the folks at Snowdrift, about a year ago, we had this to say:

"We're really excited about this stuff. These folks are making wonderful ciders of deep character, largely from cider-specific apple and perry-specific pear varieties that they grow in their own orchards. Very few producers can say that, and the dedication from limb to bottle shows."

Now, about a year on, we can say that as we've grown more and more familiar with their products, their skill is somehow still increasingly apparent. These ciders are fantastic. In a market awash with so-called "craft" producers that are just faking it, it's nice to know that there are producers out there you can trust to satisfy with every pop of a cork. Snowdrift cider is the real deal and we are so happy to have these ciders in our warehouse.

Cornice
A blended cider that gains loads of complexity from rare bittersharp apple varieties and the charred whiskey barrels in which 40% of the blended cider they produce is aged. Deeply complex and satisfying stuff. Winner of a 2016 Good Food Award and Best in Class at GLINTCAP 2016!

Dry
A stunning cider made with Washington-grown English bittersweet cider apple varieties like Bramley, Yarlington Mill, and Bulmer's Norman. Delicate and light-bodied but well-structured with tannic texture.

Cliffbreaks Blend
Cliffbreaks Blend is a bold and powerful cider with deep bittersweet apple complexity reminiscent of the best stuff you'll find in English cider country. Snowdrift recommends it alongside aged cheeses, steaks, and cured sausages. Their most popular cider!

Orchard Select
An approachable, semi-dry cider with elegant aromatics akin to honeysuckle and stone fruit. Lovely stuff for summer sipping!

Red Cider
Made entirely from hard-to-find red-fleshed apple varieties, this pink, crowd-pleasing cider is lush with flavors of watermelon, rhubarb, and summer berries.

Seckel Perry
A well-rounded and smooth perry made from 100% Seckel pears. Rich and full, with flavors of coconut, toffee, vanilla, citrus, and spice.
Now available in 750ml bottles.

Semi Dry
A bright New England-style cider lightly strengthened with a touch of brown sugar and honey before aging on oak. Expect a lime-like acidity alongside richer flavors of caramel and vanilla.

Fermentation Obsession

The story of Draai Laag begins with a science-obsessed kid named Dennis Hock. Growing up in the town of Millvale, Pennsylvania, Dennis became fascinated with the invisible microbiology that affected his daily life. That fascination eventually transferred to an passion for fermentation, with homebrewing experiments beginning at age 17 on the handshake promise to his mother that he wouldn't drink what he was cooking up.

Now, Dennis is free to both experiment and drink, and he's doing so at his very own brewery. The beers of Draai Laag reflect that obsession with fermentation, expressing a huge range of aromatics, textures, and tastes coaxed from wild fermentations, unusual cultivated yeasts, and variable fermentation conditions. These beers are like nothing else out there, and we've just received a restock from this exciting brewery. Check 'em out!

Apples & Pears
Apples & Pears represents Draai Laag's attempt to hybridize the best qualities of English ciders and their own Belgian-ish approach to fermentation. Brewed with apples, pears, and elderflowers and fermented with Brettanomyces, lactobacillus bacteria, and white wine yeast. Dry, tart, aromatic, and floral.
Now available in 500ml bottles and 1/6 bbl kegs.

Cru
Cru is an old ale fermented with Draai Laag's "Wild Angels" yeast strain, which was cultivated from a sample captured from the air surrounding the brewery. It's rich and malty, with a gentle tartness that suggests flavors of cherry and plum.

Petite Ferme
In an effort to create a true farmhouse ale, Draai Laag has bottled the barnyard with Petite Ferme. No seriously--it's made with raw wheat straw, farm-collected yeast strains, and local honeysuckle flowers. The result is earthy, citrusy, floral, and tinged with Brettanomyces funk.

R2 Koelschip
A curious, tart, lemony farmhouse ale fermented with wild yeasts collected from the open air during the beer's stay in the brewery's namesake R2 coolship. Drinkable, smooth, and layered.

Relic
A funky 'n' fruity golden ale fermented with yeast gathered from deep inside a 17th century cabinet. Mineral, earthy, and bitter.

Tasty Øl from To Øl

To Øl has come a long way from their humble beginnings brewing beer in their school's kitchen with Mikkeller founder Mikkel Borg Bjergsø. In the 11 years that have transpired, they've evolved, gaining skill, international distribution, and wild admiration. Here in 2016, they continue to evolve, as they prepare to open an exciting Copenhagen brewpub called BRUS, in which they'll continue to develop their talents and expand into the realms of restaurant ownership, grocery sales, and kombucha, soda, and bottled cocktail-making.

Throughout their development, one thing about To Øl has remained consistent: their commitment to producing the unexpected, and doing it well. The beers we've been seeing from them lately are better than ever, and are truly unlike anything else in the market. Check 'em out!

Jaemes Braun

Bright Hoppy Sours from Mikkeller

If there's one recent trend in beer that we're super bought in on, it's that of the dry-hopped sour.

The tangy and bright acidity of sour beers does beautiful things to the fruity and floral aromatics lent to beer by a big charge of American hops, resulting in a delicious, satisfying, and distinctly Americanized beer style. It might come as a surprise, then, that Denmark's Mikkeller is making some of the most delicious examples out there with their SpontanDryHop series and their SpontanNelsonSauvin Brut. These are exciting beers that represent the best of modern beermaking. You'll love them!

Real Lager from Brewfist

Last week, we extolled the refreshing power of a cold glass of Berliner weisse on a hot Summer's day. This week, we'll shift our focus to another great warm weather beer: the pale hoppy lager.

Brewfist's La Bassa is everything we want out of these clean, refreshing crushers.
