Mont des Cats
The Abbey Mont des Cats is the only French Trappist brewery in the world! A first community of the Hospital Brothers of St. Anthony was settled in 1650 and lasted until the French Revolution, which closed the monastery in 1792. In 1826, a new community of Trappists was established, and this congregation has run the abbey ever since. A breakaway group of Trappist monks left Mont des Cats and settled in Westvleteren (Belgium). In 1848 the monastery built a forge and a brewery — 163 years after its first brewing, the abbey of Mont-des-Cats resumed it brewing tradition. The new Trappist beer “Mont des Cats” was presented in June 2011: an enticing copper-colored beer with aromas of fruits, brown sugar, caramel, a touch of roasted malts. A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices, and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
