Justin & Jocelyn Leigh of Dwinell Country Ales are dedicated to making simple, slow fermentations in the Klickitat Valley using local ingredients and native yeast. The beers they produce are inspired by old-world techniques, but are not beholden to them. From the rustic, farmhouse beers of Wallonia to the naturally-sparkling, bittersweet ciders of Normandy, they draw inspiration from traditional methodologies to craft beers, ciders, and wines that showcase seasonality and a sense of place. Pure Simcoe Mountain water, delicate heirloom malts, Yakima Valley hops, and an elegant blend of yeast and bacteria give these beers a distinct sense of origin.
